Meatloaf (cmos)

My mother has used this recipe many times, and I just recently tried it myself. It's bulletproof enough that even if you forget the ketchup and warm water (like I did), it still tastes OK. I can stretch this out to at least 3 meals, and it does fine in the freezer, making it perfect for someone who doesn't want to cook every day.

Ingredients

  • 1 ¼ lbs. ground beef
  • ¾ lbs. ground pork
  • 1 ½ cups Progresso breadcrumbs
  • 1 package Lipton onion soup mix
  • 2/3 cup warm water
  • 1/3 cup ketchup
  • 2 eggs, beaten

You can replace the ground pork with ground beef if you wish. I used 93/7 ground beef, and it works quite well (and is healthier to boot). I imagine this would taste even better with some extra seasoning such as barbecue sauce or Tony Chachere's seasoning, but I haven't confirmed this through experimentation... yet.

Directions

  1. Combine all ingredients (I recommend you mix it in a 4 qt. mixing bowl or something of similar size).
  2. Put mixture into a 9x5 loaf pan.
  3. Bake uncovered at 350° F for 1 ½ hours.
