Roasted chicken

Simple, yet DELICIOUS (trust me). See also my gravy recipe to make gravy with the drippings.
Ingredients
- 4 lb. whole chicken
- ~2 tbsp salt
- 1 small onion
- 1 small apple
Directions
- Preheat oven to 425F.
- Peel the apple and onion, and cut each into quarters.
- Rub the outside of the chicken with salt to form a nice crust.
- Place the chicken into a roasting pan and place the onion and apple quarters into the cavity.
- Bake the chicken for 80-100 minutes, or until the internal temperature reaches 160F.
- Let chicken rest 15 minutes before carving (it will coast the rest of the way to the recommended safe temperature of 165F).
