Roasted chicken

Simple, yet DELICIOUS (trust me). See also my gravy recipe to make gravy with the drippings.

Ingredients

  • 4 lb. whole chicken
  • ~2 tbsp salt
  • 1 small onion
  • 1 small apple

Directions

  1. Preheat oven to 425F.
  2. Peel the apple and onion, and cut each into quarters.
  3. Rub the outside of the chicken with salt to form a nice crust.
  4. Place the chicken into a roasting pan and place the onion and apple quarters into the cavity.
  5. Bake the chicken for 80-100 minutes, or until the internal temperature reaches 160F.
  6. Let chicken rest 15 minutes before carving (it will coast the rest of the way to the recommended safe temperature of 165F).
